   Born out of our love of fine wines, Michael and Melissa Poole have created the premier fine wine location in Central Texas. After traveling the world and sampling different wines and meads, head wine maker and owner Michael Poole decided to make his way back home to Texas and bring the world of great tasting wine with him. 

 In the tradition of the South Coast Winery and Carter Estate Winery resorts in Temecula Wine Country, Carter Creek Winery Resort & Spa combines luxurious accommodations with fine wine and fine dining and is the newest addition to the Carter Hospitality Group collection of winery resorts. Owners and vintners Jim and Dawn Carter have created a paragon of Hill Country hospitality with residential-style villas, spectacular wines, craft beer, on-site spa services, and more. 

 Come visit our stunning new Vineyard Farmhouse in Hye, TX.  For the last few months we have been transforming this 100 year old historic home from a 5 bedroom Airbnb into a world class wine tasting room.  Indoor and outdoor seating, with beautiful views and award winning wine.  Located in the heart of Texas Wine Country on Hwy US-290. 

 Hilmy Cellars is an artisan winery in Fredericksburg, offering a diverse selection of wines, from robust reds to crisp whites and elegant rosés. Our grapes come from select growers and our estate vineyards, known for their warm weather varietals. Our dedicated winemaker focuses on single-varietal wines and sophisticated blends to showcase the grapes' purest expression. Thai and Asian inspired food cooked fresh to order.  We opened in July of 2019 and recently settled into our building in Stonewall Texas.
